Nutrients. It might be easier to list those that aren’t present! Here’s a snapshot of health: fiber, protein, B vitamins, potassium, vitamin C, magnesium and on and on and on. Significant amount of each nutrient are in 1/3 of an avocado! They also provide a great source of healthy fats that can lowers your risk of heart disease and stroke. What more can you ask for?

Slice the avocado and start chopping the nuts!


First steps: mix the red wine vinegar and olive oil in a bowl. Crush and shop basil and put in bowl.  The second steps are easy! Slice the avocado, chop the nuts, cut the onion, slice the tomatoes, crush and mince the garlic. Find more recipes here like Sweet Potato Fries with Thyme

Avocado Rice Bowl

Print Recipe
Serves: 2 Cooking Time: 30 minutes


  • Bowl Version
  • 2 ripe Avocados
  • 1 cup Jasmin rice
  • 2 T red wine vinegar
  • 2 T olive oil (extra virgin)
  • 1/2 cup mixed nuts
  • 1 clove garlic
  • 3 basil leaves
  • Corn Tortilla Version
  • 2 tomatoes
  • 1/2 sweet onion
  • 1/4 cup mushrooms
  • Grated cheese, optional



Measure out 1 dry cup of Jasmin rice, cook (boil on stove) according to directions


Chop the nuts


Crush and mince the garlic clove and basil


Mix together red wine vinegar and olive oil in bowl


Once cooked, add rice and all ingredients to bowl, stir in avocado until creamy


Top with grated cheese (I used Parmesan)


Tip: Slice the avocado last to preserve color!


Corn Tortilla Version


Cut the vegetables (tomatoes, onions, mushrooms)


Saute in olive oil on stove top


Put together and top with grated cheese
