Spinach, Seed & Nut Salad

Summer time is here! Start it off right with a fresh, spinach salad. Great way to get the right amount of protein, fiber, potassium and vitamin C. Packed full of other nutrients as well. This is what a salad should truly look like.

Spinach, Seeds and Nut Salad

Serves: 1 Cooking Time: 10 minutes

Ingredients

  • 1 cup raw spinach
  • 1 cup red & green pepper
  • 1/2 cucumber
  • 1/2 cup cherry tomatoes
  • 1 T sunflower seeds
  • 1 T sliced almonds
  • 1 T dried cranberries
  • Splash of balsamic Vinaigrette

Instructions

Cut red & green pepper and cucumber into slices

Place raw spinach on plate, add vegetables

Add seeds, almonds and dried cranberries

Splash of balsamic vinaigrette
